End Of The Day Wines
Blend or Cuvée: 36% Mourvedre, 28% Grenache, 18% Tannat, 8% Syrah, 4% Counoise, 4% Mataro, 2% Graciano
Nose: Immediately electrifying on the nose, with mouthwatering red and black licorice, candied cherry, and dried tamarind. A wisp of black pepper and mushroom hovers in the background, offering a new experience with each smell.
Palate: Very soft at first sip with a round and silky texture, the wine reveals notes of strawberry, raspberry, clove, and cinnamon. Vibrant acidity and a light spiciness carry through a nearly endless finish.
Winemaking Notes: "An exploration of several grapes and soil types across Paso Robles, each variety was harvested at an average of 24 Brix, resulting in a wine of balanced 14% alcohol. Each variety was fermented separately in macro bins and small, stainless steel fermenters using a combination of pump-overs and hand punch-downs. Lots were pressed at the optimal time to reduce astringent tannin and highlight the vibrant, aromatic, and juicy nature of the fruit and vintage."
